Well, a month has flown by and now we are going to have some salad...good stuff on hot days.
So here are a couple of easy salads that we love and enjoy often.
Creamy Cucumbers
1 Large Cucumber, thinly sliced. (Peeled if regular, not needed to peel if an 'English' variety)
1/2 cup plain Greek yogurt
1Tablespoon Apple Cider Vinegar, (or you can use lemon juice)
2 Tablespoons chopped Chives. (Or sub green onions. you can increase these if you like)
1 drop Tabasco. can increase to taste.
1/2 Teaspoon dill seed...or dill weed
1 dash black pepper...or more to taste.
Put sliced cucumbers in a colander, and let drain for at least 30 minutes. (Discard juice or use in smoothies, etc.)
Put all ingredients in a large bowl, Mix well, and chill well till serving.
This is great even without the yogurt...Sometimes we use a thinly sliced red onion half instead of chives.

Carrot/Pineapple/Raisin Melange
1/2 cup juice packed crushed pineapple, (Do not drain)
2 cups shredded carrots
1/4 cup raisins...(or more if you like).
Toss all gently together, chill well and serve.
Colorful and delicious!

That's what Granny needed now, a good receipe for cucumbers. She makes it also with Greek Yoghurt, but just plane, but this really looks...and tastes good😸Pawkisses for a Happy Day🐾😽💞

ReplyDeleteLooks yummy! We salt the cucumbers before we let them sit, and then drain the liquid. Then we use sour cream instead of yogurt. Well, that's Oma's old recipe from when nobody cared about fat. The carrot salad looks yummy too!
ReplyDeleteSalads are all for me ! And white cheese with cucumbers is my favorite ! I make it too it's so refreshing when it's hot !
ReplyDeleteWe fix the cucumber salad quite often. We use the English Cucumbers that way Lee does not burp! I don't like it when she burps, sneezes or laughs but you know what if she passes gas that is O.K.
